Jacob Perkins patents the vapour-compression machine in 1834; refrigerated stores, ships and railcars follow.

A fluid that is compressed, cooled and let expand removes heat from a cold space. The same cycle drives refrigerators, air conditioners and, run in the other direction, heat pumps. Carl von Linde's ammonia refrigeration machine (1876) opened the cold chain for meat, dairy and fruit across continents.
